Pumpkin Dessert with walnut and tahini

As Turkish people we don’t celebrate Christmas but we celebrate New Year. 

This is one of the desserts that we prepare especially in winter and that you can see on new year’s tables.

               Ingredients

1 kilo of  pumpkin (peeled, seeded, cubed)
300 gr of sugar (1,5 – 2 glasses)
5 cloves
1/2 cup walnuts

tahini (a paste made from ground, hulled sesame seeds)

 

Cut the pumpkin slices into small  cubes. Place the  pumpkins  into a pan. Add the sugar and stir to combine. Cover the pan and allow to sit for 3-4 hours. The sugar will draw out an amazing amount of liquid from the pumpkin. Add the cloves. Cook the pumpkins at a low heat until they are tender. During the last 5 minutes the pumpkin color will change and will take on a bright orange ‘candied’ look.

Remove from heat. 

 

Put some tahini and walnuts on the pumpkin dessert before serving it.
