Classic Polish cucumber soup with rice

 

Ingredients:

2 carrots

parsley

a piece of celery

a large leek

onion

2 cloves of garlic

spices (3 - 4 grains of allspice , teaspoon of peppercorns , half teaspoon of lovage , tablespoon of salt)

meat (piece of beef )

about half of pound of pickled cucumbers

4 - 5 tablespoons of rice

about 200 ml of cream (12% of fat )

Preparation:

Wash the meat , cover it with cold water and bring to the boil .
When you create a foam (you can remove it or not) put the peeled vegetables cut into smaller pieces
into the pot and cook over low heat for about 45 - 60 minutes .
Add spices and cook further until the meat is tender. Strain the broth, add the grated cucumbers.
You can add the juice from the cucumbers, because then the soup is more sourer.
Boil the soup with cucumbers , add the rice, stir well to avoid clinging to the bottom
and cook until it is " al dente " .If you like,  add fresh cream.

 

Breaded pork chops with potatoes and cabbage

 

Stewed cabbage:

Ingredients:

1 small cabbage

1 big onion

4 spoons of butter

1 spoon of flour

1 teaspoon of cumin and 1 spoon of chopped dill

Salt, vegeta spice, lemon juice, sugar, vinegar

 

Preparation:

Take out the first leaves, wash the cabbage and chop it into tiny pieces, throw away the core.
Pour 1,5 glass of hot water, add one teaspoon of salt, two spoons of butter and cook 40-50 minutes.
Using the frying pan, melt the rest  of the butter, fry the onion, sprinkle a little bit of vegeta spice on it.
When the onion is golden brown,  add flour and fry for two minutes.
Pour some brew from the cabbage into it and add it into the pot with cabbage.
Add cumin, simmer everything for about 10 minutes, stirring it often.
Add salt, sugar, lemon juice and vinegar and dill to flavour it.

 

Breaded pork chops:

Ingredients:

0,5kg loin meat

Flour

Breadcrumbs

Salt, pepper, vegeta spice, eggs

 

Preparation:

Cut the meat into 4-5 portions, flatten them using a mallet, sprinkle with salt and pepper.
Dip them into flour mixed egg and breadcrumbs with a little bit of vegeta.
Fry 5 minutes each sides. Serve with stewed cabbage, potatoes and sprinkle with dill.

 

 

HONEY CAKE

Ingredients:

4 glasses of flour

3 spoons of honey

20 dag of margarine

½ glass of sugar

2 eggs

2 spoons of  sour cream

2 tea spoons of baking soda

Preparation:

Melt margarine, honey and sour cream. Beat eggs with sugar. Add flour.
Add the cooled margarine with honey. Mix  everything. Add soda and mix.
Separate the mixture into 3 equal parts. Bake in 180 degrees for  15 minutes.

The cream for the honey cake:

Ingredients:

½ litre of milk

2 spoons of sugar

4 spoons of semolina

200g of butter

2 lemons

Preparation:

Boil milk with sugar. Add semolina. Cool down the mixture.
Cream the butter until it’s smooth.
Add boiled semolina and juice from 2 lemons.
Spread the cream onto the three baked cakes.
Pour chocolate glaze on everything.
